Chocolate Cherry Rum Fizz

 

A sweet tooth got the better of us the other evening and became the brainchild for today’s clever cocktail.  In our visions of past and the soda fountain drinks of our youth we offer you an adult version of some of our favorite childhood flavors.  We spike it up a bit with some Barbados rum for a grown up version of a Chocolate Cherry Soda.  Simple in execution, delightfully childish in the joy it brings!  Cheers!

 

Chocolate Cherry Rum Fizz

In a tall soda fountain glass filled with crushed ice add:

  • 2 Ounces of Barbados Rum (We used Mt. Gay)
  • 1 ½ Ounces of Hershey’s Dark Chocolate Syrup
  • ½ Ounce Luxardo Maraschino Cherry Syrup (only Luxardo will do!)
  • 1/2 Ounce Whole Milk
  • 1 Teaspoon Acid Phosphate* (Optional)
  • Top with Club Soda

Vigorously stir the whole thing till it foams up good, let it settle and stir it some.  Garnish with a generous spear of Luxardo Maraschino Cherries.  Drink through a tall straw!

 

 

*In the fashion of the true soda fountains, acid phosphate was used as a substitute for citric acid to brighten up flavors. Though near extinct in practice today, there are still a few sources that produce acid phosphate mostly for craft bartenders. We use Horsford's Extinct Chemical Company Acid Phosphate that can be found online for around $20 a bottle.
